Grilled Chicken Caesar Wrap

Not too long ago I wrote about a grilled chicken Caesar wrap I sometimes make myself for lunch and/or dinner.  I thought I would share my “how to” with you today. 

These are the ingredients I’m using tonight…..hearts of romaine lettuce, Caesar dressing, pre-packaged grilled chicken, olives and large flour tortillas.  I lightly heat up the tortillas by wrapping them in a damp paper towel….it makes them a little easier to work with and they are less likely to tear.  Wet the paper towel and wring out the excess water….you just want it damp, not soaking wet.  Place the tortilla on the paper towel and fold the bottom and sides inwards like so….

Leave the top flap opened up.  Beginning at the bottom of the tortilla, roll towards the open top flap and use it to secure the roll.  Your roll should look something like this…

Place in the microwave and heat.  I generally set the timer to 20 seconds for two large tortillas.  Remove from microwave and remove from the paper towel.  Do not let them set in the paper towel too long or they will stick.  Lay out your tortilla with the longest section (if there is one) running horizontally and add a large leaf of hearts of romaine.  My preference is to keep the lettuce in one large section because it makes the last step a bit easier, but you could shred the lettuce if you preferred.

Add your chicken and season to taste.  I usually season mine with fine kosher salt, cracked pepper and garlic powder.  For this wrap, I’m using pre-packaged grilled chicken from Costco.  I generally prefer to use fresh grilled chicken because it does make it so much better, but the pre-packaged chicken does work well when you are in a rush and don’t have time to cook fresh.

Top the chicken with sliced green olives….again, the amount you use is totally up to you.  If you don’t care for green olives, you can leave them off….or maybe use black olives.

Top this mixture with the Caesar dressing.  I use Cardini’s Caesar dressing….so very tasty!  They do have a light Caesar…but I don’t do light.  🙂  On top of this, add Parmesan cheese.  I generally used shredded Parmesan but was out this evening so I’m using grated.  Sometimes I will use feta cheese in place of Parmesan or in addition to….depends on my mood.

We are ready to wrap this up.  Fold a small part of the right hand side towards the center.  I used a fork in this image to hold it while I took the photo so you could see what I was talking about.

Now this is where the whole piece of lettuce comes in handy….pull your mixture close to the edge, maybe a couple inches away from the bottom.  Fold this flap up and over your mixture and roll towards the top ~ making sure your right hand fold is staying tucked in during the process. 

Your finished product should look something like this…..

Ahhhh….perfection!  😉  These are excellent to take for lunch….simply wrap in plastic wrap.  I place the wrap on the plastic a little off center and grab the bottom right corner up over the bottom.  I fold the bottom left corner over the entire wrap….pull the portion in the left corner over the open end and top of the wrap and finish up the plastic by rolling upward.  This works well because you can partially unwrap the upper section of the plastic and enjoy the wrap while the lower half is still in plastic to prevent drips.  Just pop it into a refrigerator at work until you are ready to eat…

This is how I like to make mine….you could add any ingredients you like ~ just remember…this is suppose to be a light but filling lunch or dinner.   The grocery store close to my home has several different types of tortillas.  I have seen whole wheat, sun dried tomato (my favorite) and spinach.  Insanely easy….add a cup of soup….or a some fruit…..or just by itself.  A quick and easy meal.

    Hello dear sweet girl! Your pictures are again exquisite! I especially LOVE the hibiscus photo. Please, could you someday do a small tutorial on how you edit photos? That is when your editing program is not acting up?

    The little girl is adorable although I don’t know how well I would fair at watching little ones. It’s been so long and I’m not sure how my nerves would hold up lol Hope it went good for you!

    Lovely wrap, I love just about anything in wraps. Sometimes I order quite a bit of veggie wraps at the local grocery store. I love the sun-dried tomato wraps there.

      Hello Sandy! What a lovely comment…thank you. 🙂 I can’t promise, but I will certainly try to put something together about editing photos….perhaps it is something I can do over the holidays when I will have lots of time off. I can certainly put it on my list of things to do. 🙂
